Is it possible to configure the Firewall Service to allow all internal addresses to be able to connect to everything (ie no restriction)? I can only seem to be able to allow access to the protocols defined in the Protocol Definitions container.

Only Secure NAT clients have that limitation. Firewall Clients can access everything. You need to install the FW client if you are missing functionality.
